Scallops with Chorizo and Salsa Verde
Shopping List
- 4 Scallops Buy
- 200ml Olive Oil
- 20g Tarragon
- 20g Basil
- 20g Mint
- 20g Chives
- 10g Dill
- 20g Parsley
- 30g Anchovies
- 30g Capers
- 30g Gherkins
- 150g Chorizo
Cooking Instructions
Treat your guests to special Scottish seafood.
Step One
Place anchovies, capers, gherkins and all the herbs into a blender and pulse with the olive oil until smooth.
Step Two
Dice the chorizo and cook in a frying pan with a little oil.
Step Three
Sear the scallops, in a really hot pan, for approximately 40 seconds on either side. Arrange scallops on a plate.
Step Four
Top each of the scallops with a tablespoon of the salsa and chorizo before serving.
