The Cabernet and Syrah grapes are hand-picked, hand-sorted and fermented whole in separate 40hl Allier oak tanks. Throughout fermentation the grapes are manually pigeaged (punched down) and ultimately the wine is left on its skins for an extended period of time for the maximum extraction of flavours. Upon pressing, the wine is laid to partially mature in Allier oak 228l barrels for up to 12 months to impart full-bodied aromas and flavours of ripe blackberries and harmonious tannins with hints of chocolate and Provençal garrigue.
Domaine De La Combe
A family-owned boutique vineyard producing a small quantity of premium organic wines and hand harvested grapes reflect the classic terroir and climate of the region, Château de La Cômbe stands on the Ancient Roman road the Via Julia Augusta, connecting Frejus and Vidauban, and had been producing wines for centuries. In 2009, the château was lovingly restored and the vines were replanted to provide our first harvest in 2013. Since then our wines have received numerous prestigious awards and are enjoyed by a privileged few.
