Oysters

Over the course of the year we sell different types of oyster depending on availability. Our oysters are grown naturally on the shore at Ardkinglas, at the head of Loch Fyne and by our partner growers elsewhere. All our oysters are depurated (purified) in natural sea water. Oysters feed entirely on plankton ensuring that the process is completely sustainable.

Langoustines

Langoustines are supplied to our shop and Oyster Bar by local fishermen who have been fishing the upper reaches of Loch Fyne using traditional creels for decades. Our live langoustines are creel caught, this time on the West Coast of Scotland near Oban. Did you know that Scotland supplies two thirds f the world's langoustines? The good news is that we keep plenty of the big juicy ones right here.

Queen Scallops

Our Queenies are fished from wild caught stocks around the South Coast of Scotland. They are sold frozen in their brightly coloured half shells and we highly recommend you try them drenched in garlic butter. Approx. 50-70 per kg

King Scallops

We get ours from Gordon Goldsworthy who operates a small fleet of fishing boats sourcing diver caught king scallops. In the event of poor weather on the West Coast we are able to source frozen scallops from MCS accredited Manx Fisheries where the flavour is locked in at source and there is no subsequent loss of taste. 

Mussels

Our mussels are grown on ropes in Loch Fyne and also at Hebridean Mussels, our farm located on the Isle of Lewis.  We have almost 200 miles of rope covered with mussels, which ensures a steady supply, all growing completely naturally. That would make a large of bowl of Moules Mariniere!
