Mussels with Ravigote Sauce

This is a very elegant, light starter, or lovely as part of a large buffet.

Shopping List

  • 1kg mussels, scrubbed, de-bearded etc.
  • 175ml dry white wine
  • 1 large egg, hard boiled
  • 125ml olive oil
  • 3 tbsp white wine vinegar
  • 3 shallots, finely chopped
  • 1 tbsp baby capers, rinsed, drained and chopped
  • 1 tsp Dijon mustard
  • 1 tbsp chopped flat leafed parsley
  • 1 scant tbsp chopped chervil
  • 1 scant tbsp chopped chives
  • Sea salt & ground black pepper

Cooking Instructions

  1. Steam mussels in a lidded pan with the white wine over a high heat until opened.  Remove with a slotted spoon.
  2. Remove mussels from shells and place in a bowl, reserving one half of each shell for presentation later.
  3. Peel the hard-boiled egg, and push through a sieve using the back of a wooden spoon.  Whisk in the olive oil, vinegar, shallots, capers, mustard and herbs.  Season.
  4. Fold the mussels into the sauce and chill, covered, for at least 1 hour.
  5. Arrange shells on a large platter and spoon a mussel with a little of the sauce into each shell.
