Cooking Instructions
- Steam mussels in a lidded pan with the white wine over a high heat until opened. Remove with a slotted spoon.
- Remove mussels from shells and place in a bowl, reserving one half of each shell for presentation later.
- Peel the hard-boiled egg, and push through a sieve using the back of a wooden spoon. Whisk in the olive oil, vinegar, shallots, capers, mustard and herbs. Season.
- Fold the mussels into the sauce and chill, covered, for at least 1 hour.
- Arrange shells on a large platter and spoon a mussel with a little of the sauce into each shell.
