Cooking Instructions
- Whisk together the creme fraiche and egg yolks in a medium bowl. Set aside.
- Melt butter in a frying pan over a medium heat. Add shallots and saute until soft. Add Cognac and ignite. Let flames die down, then whisk in lemon juice and saffron. Set aside.
- Place mussels in a large pan, pour in wine. Bring to a boil over a high heat, cover with a lid and steam until mussels open. Remove from heat and remove mussels with a slotted spoon to a warm bowl. Cover with foil and set aside.
- Strain mussel cooking liquor through a sieve lined with kitchen paper into shallot mixture. Bring this to a boil and reduce to approximately 250ml.
- Slowly whisk this hot liquid into the creme fraiche and egg yolk mixture and return this to the pan. Stir over a low heat until mixture is thick enough to coat the back of a spoon.
- Remove from heat and season with salt and pepper and stir in the chopped chives.
- Spoon sauce over mussels and serve.
