Mussels with Lemon & Saffron Sauce

Otherwise known as mouclade, this delicious Bordelais dish is best served with a good, crisp white wine.

Shopping List

  • 125ml creme fraiche
  • 2 large egg yolks
  • 2 tbsp unsalted butter
  • 2 large shallots, finely chopped
  • 2 tbsp Cognac
  • 3 tbsp lemon juice
  • 1 generous pinch saffron threads
  • 40 mussels, scrubbed and de-bearded
  • 250ml dry white wine
  • Small bunch snipped chives
  • Sea salt and ground black pepper

Cooking Instructions

  1. Whisk together the creme fraiche and egg yolks in a medium bowl.  Set aside.
  2. Melt butter in a frying pan over a medium heat.  Add shallots and saute until soft.  Add Cognac and ignite.  Let flames die down, then whisk in lemon juice and saffron.  Set aside.
  3. Place mussels in a large pan, pour in wine.  Bring to a boil over a high heat, cover with a lid and steam until mussels open.  Remove from heat and remove mussels with a slotted spoon to a warm bowl.  Cover with foil and set aside.
  4. Strain mussel cooking liquor through a sieve lined with kitchen paper into shallot mixture.  Bring this to a boil and reduce to approximately 250ml.
  5. Slowly whisk this hot liquid into the creme fraiche and egg yolk mixture and return this to the pan.  Stir over a low heat until mixture is thick enough to coat the back of a spoon.
  6. Remove from heat and season with salt and pepper and stir in the chopped chives.
  7. Spoon sauce over mussels and serve.
