Discard any mussels with open shells, scrub shells under running cold water. Once cooked discard any mussels that have not opened.

  1. Just before cooking, pull the stringy ‘beard’ from the shell with a small knife
  2. Prise open the shell. Since this often kills the mussel, it must be eaten or cooked at once.
