Steamed Lobster with Charmoula Dipping Sauce

Charmoula is a North African mixture of oil, herbs, spices and lemon.

Shopping List

  • 2 medium sized lobsters, live
  • 6tbsp butter
  • 1 clove garlic, crushed
  • 2 tbsp chopped coriander
  • 1 tbsp lemon juice
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Sea salt and ground black pepper

Cooking Instructions

  1. In a pan large enough to hold the lobsters, half fill with water and add 2 tbsp salt.  Bring to the boil, add the lobsters, cover and cook until shells are pink and lobsters are cooked through (about 12 minutes).
  2. Meanwhile, melt butter in a small pan over a low heat.  Add garlic and saute for 1 minute.
  3. Stir in remaining ingredients.  Season to taste and divide between two small ramekins.
  4. Drain lobsters, halve and serve alongside dipping butter.
