Cooking Instructions
- Place fish in a wide shallow pan. Add milk, bring to the simmer, cover and cook gently for 8-10 minutes.
- Remove fish to a warmed plate, cover with a tent of foil to keep warm and set aside.
- Simmer the cooking liquid uncovered for 5 minutes until slightly reduced, add the mascarpone and whisk to incorporate, then whisk in the butter.
- Scatter in the chives, season with black pepper and pour over the haddock.
