Salmon with Lime Butter Sauce

This recipe is quick and easy to make, and is delicious with steamed Jersey Royal potatoes and spring greens. The salmon may be cooked on the barbecue or under the grill.

Shopping List

Salmon

  • 6 fillets salmon, about 175g each
  • 2 tsp finely grated lime zest
  • Sea salt and ground black pepper

Lime Butter Sauce

  • 1 large clove garlic, crushed
  • 60ml lime juice
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 125g unsalted butter, melted

Cooking Instructions

  1. Pre-heat grill or barbecue.
  2. Season salmon with salt and pepper and grill flesh side down for 4 minutes.  Turn fillets over and grill for a further 4 minutes or until salmon is cooked.  Remove from heat, sprinkle with lime zest.
  3. While the salmon is cooking, puree together garlic, lime juice, salt and pepper in a blender until smooth.  With the motor running, slowly pour in the melted butter and blend until emulsified.
  4. Serve salmon with the butter sauce alongside.
