Cherry Clafoutis

A traditional French dessert, delicious served with a spoonful of thick creme fraiche.

Shopping List

  • 15g butter
  • 250g cherries, pitted
  • 55g plain flour
  • 1 pinch salt
  • 55g caster sugar
  • 3 medium eggs
  • 1 tsp vanilla extract
  • 150ml milk
  • 200ml double cream
  • Icing sugar and creme fraiche to serve

Cooking Instructions

  1. Butter a 20cm shallow flan dish and scatter with the pitted cherries.
  2. Sift the plain flour, salt and caster sugar into a bowl.
  3. In a separate bowl, beat the eggs with the vanilla extract.  Gradually add the milk and double cream and whisk until thoroughly combined.
  4. Add the flour and sugar mixture slowly to the egg and cream mixture, beat well until smooth.
  5. Pour over the cherries and bake in a preheated oven 180°C, gas mark 4 for 45 minutes or until just firm. 
  6. Sift with icing sugar and serve warm.
